AS the carpet is laid, the lights fitted and the final furniture arrives, the much-anticipated opening of The Thoroughbred is ever so close since renovations began more than 18 months ago.

It has been a long journey for all involved, but one which is starting to pay dividends, with the place really coming together in amazing fashion over the final stages.
As with all good venues, great staff is a must.
Three key people who will be heavily involved with getting things off to a flying start are venue manager Sarah Plumpton, chief baker Peter Fogarty and head chef Jessicca Thorpe.
Sarah Plumpton, a Scone resident for more than 20 years, brings with her a huge amount of hospitality knowledge and expertise.
Her background includes roles in hotel management, catering, running a family business and also finance.
She brings with her a wealth of knowledge and is very excited to be appointed this role.
“I’m looking forward to servicing the local community and thoroughbred industry,” she said.
Head chef Jessicca Thorpe also comes from a colourful background.
She started her apprenticeship under well-known celebrity chef Jamie Oliver, before working under the watchful eye of Toby Puttock and Melbourne-based chef Warren Flanagan.
She moved on to The Palace Hotel, too.
Ms Thorpe comes from an Italian background and is very passionate about producing good quality food and sourcing local produce.
Chief baker Peter Fogarty will also play a huge part in the success of the new venture.
A bakery has been missing from Scone for quite some time now and Mr Fogarty is more than confident that The Thoroughbred will fill that void.
A baker and pastry chef of more than 40 years, he is thrilled to be involved in what can only be described as a “unique venture” and can’t wait to get cooking.
He not only comes with a huge amount of experience in this area, but has also been fortunate to work with some of the best traditional “old school” bakers of their time.
Formally the owner of Glenbawn Kiosk with his wife Carol, Mr Fogarty is quite “the local” and will be a terrific asset to the business.
Owner Peter Allen is thrilled with the quality of staff that has joined the team so far.
“You can put all the time and effort in the world into a project, but without good staff it is difficult to be successful,” he said.
“I am really excited to have these three key staff members on board and can’t wait to get started.”
An opening date is set to be announced in the coming weeks via social media.
While most job positions have been filled, there are still a few openings available in the bar and cafe area.
